The Languedoc (langue d'oc, from French langue language; Occitan oc for French oui, a reference to the Occitan language ) is a historical French province . It encompassed the central part of southern France between the Rhone as the border with Provence and the Garonne as the border with Gascony . Its territory encompassed most of what is now the Languedoc-Roussillon-Midi-Pyrénées region , the Ardèche department and parts of the Haute-Loire department , both of which are now part of the Auvergne-Rhône-Alpes region . Its capital was Toulouse .
